INGREDIENTS
Cereal mix
Nestum cereal (original flavour)
¾ cup
Salt
½ tsp
Sugar
1½ tsp
Milk Powder
1½ tbsp
Prawns
Prawns, trimmed, deveined and washed well
300 grams
Salt
1 tsp
Egg, beaten
½
Plain Flour
2 tbsp
Vegetable oil for deep-frying
Unsalted Butter
30 grams
Chilli Padi, thinly sliced (remove seeds for less spice)

Curry Leaves, rinsed and dried, stems removed
6-10 sprigs
Directions
Step 1
Thoroughly combine ingredients for cereal mix. Set aside.
Step 2
Sprinkle prawns with salt, egg and flour. Mix until well coated. Deep fry prawns.
Step 3
In a pan, heat butter until frothy and lightly brown.
Step 4
Add curry leaves, chilli and fry until fragrant. Reduce heat to low.
Step 5
Add cereal mix and fry until golden brown.
Step 6
Add prawns and tossed until well mixed. Serve hot.
